1/2 tsp each garlic and onion powder
1/4 tsp pepper
2 Tbsp chopped fresh rosemary optional
1/2 cup nutritional yeast, may omit
1/2 baking soda
1 cup water

*green onion, chopped
*sautéed mushrooms

Combine with a whisk the flour and seasonings add water slowly whisking continuously till smooth and to avoid lumps. Let stand for at least 30 minutes, several hours is better. Give it a stir before heating.
Heat a frying pan over medium heat. Pour batter into pan as if making pancakes. Sprinkle toppings immediately onto the batter for each omelet as it cooks. Flip like a pancake.
Serve with variety of fixings like tomatoes, spinach, salsa, hot sauce
