BACON HERB MEATBALLS by

Ingredients

1/2 tsp each paprika, salt and pepper
1/4 cup each bread crumbs and diced onion
1 egg, beaten
2 tbs minced parsley
1/2 pound ground beef
1 clove garlic, minced
2 strips bacon, diced

Instructions

HEAT oven to 400 degrees. Coat a broiler pan with nonstick spray. Cook bacon in a skillet until starting to crisp, remove. Pour off all but 1 tbs drippings from skillet. Saute onion in skillet in 1 tbs drippings until softened. Add garlic to skillet, cook 1 min. Combine ground beef, bacon, onion mixture, bread crumbs, parsley, paprika, salt and pepper in a bowl. Stir in egg. Form mixture into meatballs, place on broiler pan. Bake meatballs until fully cooked 10 min. then SERVE...
