Beef / pork steaks by

Ingredients
- beef (or pork) steaks of premium quality: 300 g
- clarified butter (or canola oil): 2-3 tbsp
- salt
- pepper
Instructions
1. If the meat is frozen defrost it and leave for at least half an hour - so it has room temperature even inside.
2. Melt the butter a bit, then spread it on both sides of steaks.
3. Spread a bit (as less as possible) of the butter on the pan and set on high heat.
4. For each steak: salt one side and put on the pan (salted side down). Do not move steaks on the pan!
5. Fry for exactly 1.5 minute on each side.
6. For each steak: salt the upper side, turn it over (with tongs, not fork) and fry for another 1.5 minute.
7. Put steaks on a grid and let them drip dry for 3 minutes.
8. Put them for 5 minutes to oven preheated to 160°C - to make them hot again.
9. Put steaks on plates, spread butter on them and grind black pepper.
Serve with boiled potatoes or french fries and lettuce.
