Tasty Thai Shrimp and Sesame Noodles by

I sometimes double the sauce to make it really yummy!
Ingredients
1 lb. medium shrimp, shelled & deveined
8 oz. bottle Newman's Own Light Italian Dressing
2 tablespoons chunky peanut butter
1 tablespoon soy sauce
1 tablespoon honey
1 tsp. grated, peeled ginger root
8 oz. pkg. penne pasta
2 tablespoons salad oil
1 tablespoon sesame oil
1 medium carrot, peeled and shredded
1 c. chopped green onion
1/4 c. fresh cilantro

medium carrot, peeled and shredded

c. chopped green onion

c. fresh cilantro
Instructions
In medium bown, mix shrimp with 1/3 cup of Newman's dressing. Cover and refrigerate for 1 hour. In small bowl, with wire whisk or fork,mix peanut butter, soy sauce,honey,ginger,crushed red pepper, and remaining dressing. Set aside.
After shrimp has marinated, prepare pasta; drain.
Meanwhile, heat salad oil and sesame oil until very hot.In hot oil, cook carrot 1 minute. Drain off dressing from shrimp, discard dressing. Add shrimp and green onions to carrots and cook,stirring constantly, approximately 3 min. or until shrimp turn opague throughout. In large bowl, toss pasta with dressing mix and shrimp mixture. Sprinkle with chopped cilantro.
