Broccoli and Cheese Soup by

Ingredients

5 Tab butter (divided)
1 small white onion diced very small
2 cloves garlic minced
1/4 C flour
2 C milk
2 C chicken broth
2 C chopped frozen broccoli florets
1 C sliced and diced carrots
1 1/2 C shredded cheddar cheese ( or more)
salt and pepper

Instructions

In a large pot heat one tablespoon butter over medium heat. Add onion and cook, stirring, about 5 minutes. Add garlic and cook about 30 seconds. Add remaining butter and flour, whisk to combine and cook for about 1 minute. Slowly add milk, whisking the entire time. Add chicken broth. Bring to a boil, cover, and then low to a simmer. Simmer for about 10 minutes (until thickened). Add broccoli and carrots and continue to simmer until veggies are tender (15 minutes or so). Remove from heat and stir in cheese until melted. Add salt and pepper.
