Chicken Garden Salad with Poppy Seed Dressing by

Ingredients


2 CUPS Romaine Lettuce
2 TBSP Mint , Chopped Finely
2˝ CUPS EverRoast® Oven Roasted Chicken Breast , Diced
2 CUPS Mango, peeled , Sliced
2 CUPS Fennel, fresh , Thinly Sliced
2 CUPS Mixed berries
2 CUPS Honeydew melon , Cubed

Poppy Seed Dressing:

Canola Oil
1 TSP Salt
2 TBSP Honey
1 TBSP Poppy Seeds
6 OZ Greek-style yogurt
1 CUP Orange juice
2 TBSP Apple cider vinegar

Instructions

1. Combine all of the ingredients together for the Poppy Seed Dressing and whisk until creamy. Set aside.

2. Layer in a glass bowl, beginning with the Romaine lettuce.

3. Follow with the mango, fennel, berries, red lettuce, chicken breast, mint and melon.

4. Drizzle dressing overtop; serve on plates garnished with mint. Best served with Poopy Seed dressing.
