Strawberry Shortcake by

Ingredients

2 cups sifted all-purpose flour
3 tsp. baking powder
3/4 tsp. salt
1/4 cup sugar
1/2 cup shortening
1 egg
1/3 cup plus 1 tbsp. milk
2 pts. strawberries, crushed and sweetened
1/2 pt. heavy cream, chilled

Instructions

1. Preheat oven to 450 degrees.

2. Sift flour, baking powder, salt and sugar into a large bowl. Add shortening.

3. Put egg into small bowl. Beat on No. 12 speed for 1/4 minute. Add milk.

4. Blend shortening and flour on No. 1 speed until like cornmeal, then add milk mixture. Beat until blended.

5. Pat dough out on floured surface, cut with 3" cutter, put on cookie sheet. Bake for 12 minutes.

NOTE: These tend to burn on the bottom so you have to watch them very closely.
