Tofu Roti by

Ingredients

30-45ml warm water
1 tsp yeast
1 tsp monk fruit sweetener

1/2 block extra firm tofu (8oz)
splash of applesauce or oil

1 1/2 cups flour
1/2 tsp salt

Instructions

In a small bowl, combine the water, yeast, and monk fruit sweetener. In a blender, blend the tofu and applesauce until smooth, then stir into the yeast mixture.

In a separate bowl, whisk together the flour and salt. Add the dry ingredients to the wet ingredients and mix until a dough forms. Knead until smooth and elastic. Cover and let rise for 1 to 2 hours, or until doubled in size.

Divide the dough into 8 equal portions. Flatten each portion into a round approximately ¼ inch thick.

Cook on a preheated griddle or skillet at 430°F (220°C) for about 90 seconds per side, or until lightly browned and cooked through.
