Greens with Quick Artichoke Vinaigrette by

Maybe low the amount of lemon juice and add honey instead.

Ingredients

3 tbs fresh lemon juice
1/3 c extra-virgin olive oil
salt and pepper
1 (12 oz) jar of artichoke hearts (packed in water or oil), drained and roughly chopped
10 oz mixed greens

Instructions

1. In a medium bowl, whisk together the lemon juice, oil, 1/2 tsp salt, and 1/4 tsp pepper. Stir in artichokes.
2. Divide the greens among individual plates and top with vinaigrette.
