Caramel Fudge by

Ingredients

3/4 c butter
2 c packed brown sugar
1/4 c Rich''s Coffee Rich
1 tsp vanilla
3 c sifted confectioners sugar

Instructions

In a large sauce pan, melt butter with brown sugar. Bring to a boil over med. heat, stirring constantly. Boil 2 minutes, continuing to stir constantly. Add Rich's Coffee Rich and continue cooking and stirring just until mixture comes to a boil; remove from heat. Cool to lukewarm, at room temperature. Mix in vanilla. Gradually add the confectioners sugar, beating vigorously until the mixture is thick, fudge-like consistency, about 2 min. spread into a greased 8- or 9- in square pan. Chill at least 2 hours before cutting. Keep refrigerated in an airtight container.
