Ingredients
2 tbs softened butter
1/4 c granulate sugar
2 tbs Rich's Coffee Rich or water
1 tbs water
1/2 tsp vanilla
1/2 c (55 gm) wel-plan baking mix
1/2 tsp baking powder
1/8 tsp salt
1 c. (160 gm) fresh or frozen blueberries
Crumb topping:
1/4 c granulated sugar
1/4 c (27 gm) wel-plan baking mix
1/8 tsp nutmeg
1/4 tsp cinnamon

Instructions
1. Prepare oven to 375.
2. In a mixing bowl, cream together butter and sugar. Beat in Coffee Rich, water, and vanilla. Stir together the baking mix, baking powder, and salt; add to creamed mixtures, mixing well. Scrape batter into a 9 x 5 loaf pan or other small baking dish. Distribute berries evenly over the batter.
3. For crumb topping: Combine the sugar, baking mix, and spices in a small bowl. Cut in margarine until the mixture resembles coarse meal. Sprinkle over the blueberries and bake for 40 min. Serve warm.
