Macadamia and Maple Chia Seed Breakfast Pudding by

Ingredients

1/3 cup chia seeds
Tin of coconut milk
1/4 cup of macadamia nuts - chopped
1 tsp cinnamon
1-2 tbsp maple syrup
3 tbsp coconut

Topping
Chopped macadamias
Shredded coconut
maple syrup

Instructions

Whizz all ingredients in a food processor, smoothie maker or blender. I find this the easiest way so you don't get clumps of chia seeds.
Once it is all mixed up put in jars and then top with some chopped macadamias, shredded coconut and drizzle over maple syrup.
Pop in the fridge overnight.
