Ingredients
Onion chopped finely
1 tsp crushed garlic
500g of minced beef
half a can of tomato puree
half a cup of peas and corn - cooked
1 small carrot - grated
1 small zucchini - grated
Coconut oil for frying
1/3 - 1/2 a head of cauliflower

Instructions
Cut up the cauliflower and steam.
While the cauliflower is cooking, fry the chopped onion and crushed garlic in some coconut oil.
Once the onion is clear and garlic fragrant add the mince to the pan and fry until brown.
Add the grated carrot, zucchini, tomato puree, peas and corn, stir and heat through.
Once the cauliflower is cooked whizz in a food processor until mushy. Add chives and mix through. You can either add parmesan cheese and a little bit of edam cheese to this mixture or sprinkle on top of the cauliflower after the next step.
Spread the mince mixture in the bottom of a dish and top with the cauliflower.
Bake in the oven for 15 minutes.
