Granola by

I made up this recipe one afternoon when I was craving muesli and yoghurt. Tomorrow I am having a smoothie bowl topped with granola, delish!!!
Ingredients
1 cup slivered/sliced almonds
1/2 cup chopped pecans
1/2 cup chopped walnuts
1/2 cup raw pepitas (pumpkin seeds)
1/2 cup sunflower seeds
2 tbsp linseeds
2 tbsp chia seeds
1 cup shredded coconut
1 tablespoon honey
2 tablespoons coconut oil
1 teaspoon vanilla extract
1 cup

shredded coconut

tablespoon honey

teaspoon vanilla extract
Instructions
Preheat oven to 200 degrees.
Combine nuts, seeds and coconut in large bowl.
Combine coconut oil, honey and vanilla in a small bowl and melt in the microwave for 30 seconds - 1minute.
Stir into nut/seed mixture until well combined.
Bake on a lined baking tray for 18 - 20 minutes, until just lightly browned.
If you want you can add some dried fruit, cranberries, dates, mango...
Cool completely before serving or popping in jars to store.
