Raw lemon and coconut truffles by

Ingredients

1 1/2 cups of desiccated coconut and another half for coating
1 cup ground almonds
4 tbsp extra virgin olive oil
4 tbsp honey
zest of one lemon
juice of lemon
1 tsp vanilla essence
a pinch of sea salt

Instructions

In a food processor, add all ingredients. Blend for 1 - 2 minutes or until mixture has mixed together to form a dough.

Use your hands to make small balls.

Roll in coconut and put in the fridge to keep firm.
