Coconut Shrimp by

Ingredients

• Oil
• ¾ cup flour (GF works)
• 1 tsp salt
• ½ tsp ground ginger
• 3 egg whites
• 2 cups shredded sweetened coconut
• 1 ½ lbs fresh large shrimp

Instructions

1. Heat oil in deep fryer or deep skillet to 325
2. Mix flour, salt, and ginger
3. Beat egg whites until foamy
4. Coat shrimp with flour
5. Dip into egg whites
6. Coat with coconut
7. Fry, turning once, for 2-3 minutes and golden brown
