Applesauce Cupcakes with Maple Cloud Frosting by

Ingredients

For the cupcake
• 1 ¼ cups flour
• 1 TBSP cinnamon
• 1 TSP baking soda
• ½ TSP salt
• 1 cup unsalted applesauce
• ½ cup unsalted butter
• 1 cup brown sugar
• ¼ cup maple syrup
• 1 egg
For the frosting
• 2 egg whites at room temp
• ¼ TSP salt
• ¼ cup brown sugar
• 1 TSP vanilla extract
• ¾ cup maple syrup

Instructions

For the cupcake
1. Preheat oven to 350
2. In your kitchenaid mixer, cream butter and brown sugar until light and fluffy. Then mix in egg, maple syrup, and applesauce mixing until combined.
3. Fold in flour, cinnamon, salt, and baking soda.
4. Pour into cupcake tins and bake for 20 min until toothpick comes out clean
For the frosting
1. In your kitchenaid mixer, whip egg whites and salt on high speed until foamy.
2. Add brown sugar and vanilla and return mixer to high until soft peaks have formed.
3. Bring maple syrup to a boil and then slowly pour into mixer while it is still on high.
4. Whip on high speed until glossy and stiff peeks have formed, about 5 min.
5. Pipe onto cooled cupcakes.
