Ingredients
1/2 tsp Extra Virgin Olive Oil
1/2 oz Green Onions
5 1/2 oz Ground Beef, 75%
1/4 tsp Salt
1/8 tsp Black Pepper
1 tsp Taco Seasoning Mix
2/5 oz Jalapeno Pepper (or Green Pepper)

Instructions
1. Preheat oven to 350°.
2. In a large skillet over medium heat, heat oil.
3. Add onion until you can smell the onions.
4. Add ground beef and brown the meat.
5. Sprinkle in salt, pepper, taco seasoning, and jalapeņo and cook, stirring, until spices are lightly toasted, 1 minute.
6. In a large mixing bowl, whisk eggs and 1/2 of the cheese, then add in meat mixture.
7. Spread mixture into an even layer in the bottom of a 2-quart baking dish.
9. Sprinkle the top with the rest of the cheese. Bake until set, about 15 minutes.
