This is my favorite chunky-salsa recipe. It's vegetarian, low fat, low calorie, and very tasty.
Ingredients
2 Roma tomatos, quartered
1/2 medium onion, quartered
1 bunch fresh cilantro, rinsed & chopped
3-4 fresh Tabasco peppers (if they're small - 1" long or
smaller. half this if they are larger.) Or substitute 2
habanero peppers.
1 can diced tomatos w/ green chiles (undrained)
1 small can v8 vegetable juice

Instructions
Place onions, peppers and cilantro in food processor and process until onions are chopped. Add tomatos; process until coarsely chopped. Add diced tomatos; process until blended. Add v8; process. Serve immediately. Sauce will keep up to a week in the refrigerater; stir well before serving.
