Chicken Parmesan Bundles by

Can make bundles and refrigerate up to 4 hours. When done, uncover and bake 375F for about 35 minutes.

Ingredients

-4 oz. low fat cream cheese
-1 package (10oz) frozen chopped spinach; thawed and well drained
-1 1/4 cups shredded mozzarella cheese; divided
-6 TB grated parmesan cheese; divided
-6 small boneless skinless chicken breast halved, pounded
-1 egg
-10 reduced-fat Ritz crackers
-1 1/2 cups spaghetti sauce; heated

Instructions

Heat oven to 375F. Mix cream cheese, spinach, 1 cup mozzarella, and 3 TBSP parmesan. Spread onto chicken breasts. Starting at one short end of each breast, roll chicken up tightly. Secure with wooden toothpicks if desired. Set aside.
Beat egg in shallow dish. Mix remaining parmesan and cracker crumbs in separate shallow dish. Dip chicken bundles in egg, then roll in crumb mixture. Place seam-sides down, in 9x13in. baking dish sprayed with cooking spray. Bake 30 min. or until chicken is done. Remove and discard toothpicks. Serve topped with sauce and remaining mozzarella.
