Sweet Fried Carrots by

Ingredients

Clean and scrape 3# carrots*
Slice carrots in 1 ˝ inch lengths
Cook until very tender (if using pressure cooker, cook 10 minutes)


Instructions

After carrots are tender, add 2 cups of brown sugar, let carrots stand for about 1 hour. Drain sugar water off carrots. Melt 1 Tbs. Butter in skillet, sauté carrots. Use as a side dish for fried rice (slightly brown carrots)

*Or use 4 cans sliced carrots (do not drain). Add 2 cups brown sugar and let set for 1 hour.
