Janie's Stuffed Eggs by

Adjust amount of mayo, salt, pepper and relish to your personal taste.

Ingredients

6 Eggs
3 tablespoons Mayonnaise
2 tablespoons Sweet Pickle Relish
1/2 salt
1/4 pepper
paprika (optional)

Instructions

Cook eggs in boiling water for 10 minutes. (Add a pinch of salt to the water before placing the eggs in it and allow water level to reach 1 inch above eggs - the salt helps with the temperature of the water and my eggs crack less when I do this.) Allow eggs to sit for 10 minutes and rinse with cold water. Remove shells and rinse.

Cut each egg in half and place the yolks in a bowl. Add mayo, relish, salt & pepper and squash together. Mix this well and then spoon back into the egg whites.

Sprinkle with a small amount of paprika and enjoy.
