LC Spicy Beans & Franks by

Ingredients

2 cups dried black eyed peas
2 tsp. vegetable oil
1.5 cups chopped onion
1 cup chopped green pepper
1 cup chopped celery
3 cloves garlic, minced
7 oz. small, cooked, smoked sausage links
5 oz. andouille sausage links, sliced
15 oz. tomato sauce
14.5 oz. diced tomatoes, undrained
3.5 cups water

Instructions

1. Preheat oven to 350. Coat 3 qt. baking dish with cooking spray. Rinse peas, drain well. Spread peas on bottom of dish.
2. Heat oil over medium. Add onion, pepper, celery and garlic. Cook and stir 3 minutes. Add sausage links and slices. Cook and stir 2 more minutes. Stir in tomato sauce, undrained diced tomatoes and water. Bring to a boil.
3. Pour tomato mixture over peas. Cover tightly with foil. Bake 1 hour. Uncover. Bake 20 to 30 minutes more or until beans are tender, stirring once or twice.
