Canadian Bacon Cassserole by

Ingredients
1 cup Canadian bacon, cubed
1/4 cup green onion, chopped
3 tbs. margarine, melted
1 doz, eggs. beaten
1 (4 oz.) jar mushrooms
2 1/2 cup soft bread crumbs
1/4 cup melted margarine
Cheese sauce:
2 tbs. margarine, add 2 1/2 tablespoons flour and stir to mix. Add 2 cups milk, 1/8 teaspoon pepper and 1/2 teaspoon salt and bring to a boil. Add 4 oz. shredded cheese and stir ti mix.

Instructions
Saute becon and onions in 3 tbs. margarine in large skillet until onions is transparent. Add eggs and cook over medium heat, stirring to form large soft curds. Stir in mushrooms and cheese sauce. Pour into greased 9x13 pan. Mix bread crumbs with 1/4 cup melted margarine.
Spread over casserole and sprinkle with paprika. Cover and refrigerate overnight. Bake in preheated oven at 350 degrees for 30 mins.
