Ingredients
1/2 c flour
3/4 c sugar
pinch of salt
3 eggs, separated
1 t vanilla
3/4 c coconut
2 T butter
2 1/4 c milk

Instructions
Mix dry ingredients in saucepan. Beat yolk into milk and add to dry ingredients. Cook over medium heat until thick. Remove from heat. Add vanilla, butter and coconut.
Banana Cream: Omit coconut and add layer of sliced bananas over crust and before filling.
Pineapple Cream: Omit coconut. Add a small can of drained crushed pineapple to filling.
