Italian Zuccini Crescent Pie by

You can double recipe and bake in 13x9" pan.
Ingredients
3 c shredded zuccini
1 c chopped onion
1 stick butter
1 T fresh parsley flakes
1/2 t salt
1/2 t pepper
1/4 t seasoning salt
1/4 t basil
1/8 t oregano
2 beaten eggs
8oz shredded jack cheese
1 can crescent rolls
2 t prepared dijon mustard

Instructions
Saute zuccini, onion, parsley, and seasonings in butter. Combine beaten eggs and cheese and stir into vegetable mixture. Seaparate crescent rolls and spread on bottom of 10" pie plate. Spread with mustard and pour in vegetable mixture. Bake at 375 for 18-20 minutes until center is set. Cover crust with foil the last 10 minutes if necessary. Let stand 10 minutes before serving.
