Roast Pork Loin with Garlic and Rosemary by

Ingredients
4 large garlic cloves, pressed
4 t chopped fresh rosemary
1 1/2 t coarse salt
1/2 t fresh ground pepper
1 2.5 lb boinless pork loin roast, well trimmed
fresh rosemary sprigs for garnish

Instructions
Preheat oven to 400. Line a 13x9 roasting pan with foil. Mix the 1st 4 ingredfients and rib all over pork. Place pork, fat side down, in prepared roasting pan. Roast pork 30 minutes. Turn roast fat side up. Roast until thermometer inserted into center of roast registers 155...about 25 min longer. Remove from oven and let stand 10 minutes before serving.
Pour any juices into small saucepan; set over low heat to keep warm. Cut pork crissways into 1/3" thick slices. Arrange slices on warm platter and pour pan juices over top. Garnish with rosemary sprigs.
