How to freeze fresh vegetables by

Ingredients

Large pot with a lid
Metal steaming basket
Vegetable of your choice
Cutting board
Sharp knife
Large bowl filled with cold water and ice
Slotted spoon
Cookie sheet
Freezer bag

Instructions

Cut your broccoli then cut the ends off or cut your cauliflower then cut the ends off. For string beans cut the ends off. Baby carrots cut in half if desired . Asparagus cut the ends off.
Fill bowl with cold water and ice set aside .
Fill your pot halfway with cold water bring to a boil and add your steamer basket .
Put your vegetables in the basket and bring to a boil again cover put with a lid . After a few minutes put the vegetables in ice water to stop the cooking process. Once they are cool put them in a row on the cookie sheet freeze two hours . Once the vegetables are frozen put them in your freezer bag and store in your freezer for a month .

Blanche asparagus for 3 minutes then put in ice to stop the cooking process.to heat it microwave 2 minutes or steam for 2-3 minutes.

Blanche bell peppers for 3 minutes after removing the seeds and cutting into strips . To re heat cook two minutes in microwave or 2-3 minutes to steam .

Broccoli and cauliflower Blanche 3 minutes then put in ice bath . 2-4 minutes to reheat in microwave or 2-4 minutes to steam .

Brussel sprouts- remove outer leaves cut in half Blanche 3 minutes then ice bath. 2-4 minutes to reheat in the microwave or 4-6 minutes to steam.

Blanche carrots for two minutes before the ice bath . 2 minutes to reheat in microwave or 2-3 minutes to steam.

Corn - husk corn then remove the kernels . Blanche two minutes . Reheat for 2 minutes in the microwave or steam 2-3 minutes .

Dark leafy greens - remove stems Blanche 3 minutes then ice bath . Microwave time to reheat 2 minutes or to steam 2-3 minutes.

Green beans - trim the ends Blanche 3 minutes before the ice bath . 2 minutes to reheat in microwave or to steam 2-3 minutes .

Peas- shell your peas Blanche for two minutes before the ice bath. If you choose to read heat in microwave cook them for two minutes or to steam them cook 2-3 minutes.

Tomatoes - remove the core then put in the freezer no blanching needed.

Zucchini or squash - cut into 2 inch slices Blanche 3 minutes then put in the ice bath . To reheat in the microwave cook for 2 minutes or to steam cook for 3 minutes .

Blueberry, blackberry, raspberry pat dry line them up on freezer tray freeze until solid then put them in freezer bags.

Cherries - pat dry remove pits and freeze on a baking sheet until solid then put in freezer bags .

Nectarines, peaches , plums - remove pit cut into slices freeze on a baking sheet until solid and frozen then put in freezer bags .

Strawberries- remove the stem , cut in half freeze them on a baking sheet until solid then put in a freezer bag.
