Ingredients

3 cups uncooked elbow macaroni - 1.5 cups
1 cup boiled shrimp. 1 cup
1 cucumber, peeled seeded and diced. 1/2 cucumber
1 tomato, seeded and diced. 1 Roma tomato
1 small red bell pepper, diced. 1/2 red bell pepper
1 small yellow bell pepper, diced. - use if you choose
1 small green bell pepper, diced. 1/2 green bell pepper
1 1/4 cups mayonnaise. 3/4 cup mayonnaise
1 1/2 tsp cajun seasoning. 3/4 tsp. cajun seasoning
2 tsp lemon juice. 1 tsp fresh lemon juice
salt to taste
Optional - use this or the dressing for shrimp pasta salad # 1
Additional Dressing ingredients - used in shrimp pasta salad # 2
1 cup mayonnaise
2 Tabls. sour cream
2 teasp. white vinegar
1 1/2 teasp.sugar
3/4 teasp. celery seed
1/4. teasp. ground mustard
1/4 teasp. salt
1/4. teasp. pepper

Instructions
1. Prepare macaroni according to package directions. Drain and rinse with cold water until cool.
2. Combine macaroni and remaining ingredients until blended. Cover and chill at least 2 hours.
