Ricotta Stuffed Chicken by

Ingredients
2 chicken breasts
1 cup ricotta cheese
2 to 3 tsp parmesan cheese
3/4 tsp basil
1/4 tsp garlic powder
dash of oregano
1/2 c baby spinach, chopped
1/2 c grape tomatoes, diced
salt and pepper, to taste
bread crumbs
olive oil

Instructions
1. combine the ricotta, parmesan, basil, garlic powder, oregano, spinach, and tomatoes in a large bowl. mix and add in salt and pepper to taste
2. cut a long horizontal slit on the side of the chicken breasts to create a cavity
3. season each side of the chicken with salt and pepper, then dip the breasts in bread crumbs, evenly covering both sides
4. stuff the cavities with the ricotta mixture and close the cavity with toothpicks
5. heat an oven safe skillet on the stove, coated with olive oil. place chicken in the skillet and transfer to oven
6. bake in a preheated oven 375 degF for 20-25 minutes, until cooked through
