Meredith's Chicken & Shells by

Ingredients
3-4 Tbs. olive oil
1 pound boneless chicken sliced bite sized(or whole rotisserie)
1+ cup sliced fresh mushrooms
3+ cups chopped fresh spinach(not baby)
1/2 cup sliced scallions
1/2 cup choppend fresh parsley(or dried)
1 c. heavy cream(or lite)
1 4 ounce container garlic & herb cheese
1/2 cup grated fresh parmesean cheese
salt & pepper to taste
12 ounces medium shells, cooked

choppend fresh parsley(or dried)

ounces medium shells, cooked
Instructions
Saute chicken in wok or large skillet over medium heat.
Add mushrooms, scallions, spinach & parsley.
Saute 5-10 minutes tioll cooked. Lower heat and pour in heavy cream, crumble in garlic herb cheese, add parmesean cheese. Stir till melted.
Season with salt & pepper.
Add to cooked pasta, mix and serve with shredded parmesean.
For larger healthier:
Use whole rotisserie chicken, whole package of fresh spinach,
1 1/2 cups light cream or half 'n half, 3/4 cup scallions, 1 1/2 cup sliced mushrooms, large container of garlic herb cheese and 16 ounces of pasta
