Caprese Stuffed Tomato by

Ingredients
1 c. fat-free cottage cheese
2 medium tomatoes
fresh basil, roughly chopped
1/4 c. balsamic vinegar, reduced to syrup

c. fat-free cottage cheese

c. balsamic vinegar, reduced to syrup
Instructions
Cut a round hole in the top of the tomatoes, pulling insides out
Combine cottage cheese and fresh basil
Fill tomato with cottage cheese mixture
Drizzle with balsamic reduction
