Shrimp Salad and Endive by

Ingredients
6 large shrimp, peeled, deveined and cubed
1/4 c. lemon juice
5 mint leaves, finely chopped
cayenne pepper and salt to taste
endive leaves, peeled and washed

large shrimp, peeled, deveined and cubed

mint leaves, finely chopped
Instructions
Steam-sautee shrimp with juice, salt and cayenne
Set aside to cool
Stir in mint leaves
Drain excess and fill endive leaves
