Veggie Stuffed Chicken by

Ingredients

4 Chicken Breasts
1 Zucchini, sliced
3 Tomatoes, sliced
2 Yellow Peppers, sliced
1/2 Red Onion, sliced
2 TBS Olive Oil
1 tsp Italian Seasoning
1 C Shredded Mozzarella Cheese
Salt and Pepper to taste

Instructions

Preheat oven to 400 degrees. Make 5 slits in each breast, drizzle with oil and seasonings. Stuff with sliced veggies and sprinkle with cheese. Bake about 25 minutes, or until no longer pink.
