Ingredients
3 cups fresh corn, cooked and shucked, full share Veggie Box corn
1 cup Veggie Box cherry tomatoes, quartered
1 cup Veggie Box sweet pepper, seeded and diced
1/2 Veggie Box Cipollini onion, diced finely
1/2 cup finely chopped cilantro or basil (optional)
1/2 hot pepper, seeded and diced finely, (use any hot pepper from a previous Veggie Box, or pick up a jalapeno at the farmers market)
2 cloves Veggie Box garlic, minced
1-2 limes, juiced
salt and pepper to taste
(optional) tortilla chips for scooping

Instructions
In a large bowl, combine all of the ingredients together and season with kosher salt and pepper to taste. Chill until ready to serve. Serve with tortilla chips if desired or over chicken, fish, or a salad. Store leftovers in an airtight container in the fridge.
