Lemon Balm Vinaigrette Salad by

Ingredients
1 tablespoon shallot, minced
2 tablespoons of Veggie Box lemon balm, leaves finely minced
1/2 teaspoon of lemon zest
6 tablespoons of lemon juice
1 teaspoon of Dijon mustard
4 tablespoons of white wine vinegar
1 teaspoon of brown sugar
8 tablespoons of oil (olive, grape seed, walnut, etc.)
1 bag of salad mix

bag of salad mix
Instructions
Mix all ingredients except for oil and salad mix in a non-reactive bowl. Slowly whisk in the oil. Let sit for at least an hour. Mix with salad mix and any other veggies you’d like in your salad. Enjoy!
