Tomato and Arugula Crostini by

Ingredients
1 1/3 cups diced Veggie Box tomato
2 cups chopped fresh Veggie Box arugula
1/2 cup parmesan cheese
1 tablespoon extra-virgin olive oil
2 teaspoons white balsamic vinegar
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
4 slices Italian bread
1 large garlic clove, halved

Instructions
Combine Veggie Box tomato, Veggie Box arugula, parmesan cheese, extra-virgin olive oil, white balsamic vinegar, kosher salt, and freshly ground black pepper in a large bowl. Let stand 20 minutes. Preheat broiler. Rub Italian bread slices with cut side of garlic clove. Place bread slices on a baking sheet; cook 2-3 minutes on each side or until lightly browned. Top bread slices with tomato and arugula mixture. Serve immediately.
