Braised Red Cabbage by

Ingredients

2 Tbsp butter
1 Veggie Box onion
1 Veggie Box red cabbage
1/4 cup apple cider vinegar
1/4 cup water (or more as needed)
Salt and pepper to taste

Instructions

Add onion to a large pot with the butter and sauté over medium heat until soft and translucent. While onion is sautéing, finely shred the cabbage. Add the cabbage, vinegar, water, and salt to the pot. Turn the heat to medium, place a lid on the pot, and let the cabbage cook, stirring occasionally, until very tender (20-30 minutes, depending on your desired texture). If the bottom of the pot begins to dry up, add another 1/4 cup water. Season with salt and pepper to taste and enjoy!
