Ingredients
2/3 C. Butter
1 C. Sugar
1 Egg
1/2 C. Self-Raising Flour
1 1/4 C. All Purpose Flour
Jam or Chocolate Chips, to decorate

Instructions
1. Preheat the oven to 350 degrees. Place the butter and sugar into the bowl of an electric mixer and beat until light and creamy. Add the egg and beat well. Stir in the flours and mix to a dough.
2. Line a baking tray with non-stick baking paper. Roll 2 tablespoons of the dough into a ball. Flatten onto the baking tray.
3. Press your thumb into the middle of the dough to make a hole. Fill the hole with jam or chocolate chips. Bake for 10-12 minutes, or until the cookies are golden. Cool on wire racks. Makes 18.
