Ingredients
1-1/2 cups cake/pastry flour
1 cup butter, softened
3/4 cup sugar
3/4 cup firmly packed brown sugar
1 tspn baking soda
1/2 tspn salt
1/2 tspn cinnamon
2 eggs
grated peel of one orange
1/2 cup grated coconut
3 cups quick or old fashioned oats, uncooked
1 tspn Vanilla
1 package butterscotch chips

package butterscotch chips
Instructions
Preheat oven to 350F
In small bowl, mix flour, baking soda, salt and cinnamon. Set aside.
In large bowl, beat butter, sugars, eggs and orange peel until creamy.
Add vanilla.
Gradually add flour mixture.
Stir in oats, coconut and chocolate chips
Form into cookie balls and bake on parchment paper for about 10 minutes (until begin to brown)
