Blini (Russian Pancakes) by

Ingredients

1 cup water
1 1/2 cups milk
2 eggs beaten
1 TBSP sugar
1 1/2 cups flour
1/2 tsp salt
4 TBSP oil

Instructions

Mix ingredients together. Batter should be thin. Preheat frying pan and grease it with butter or oil before cooking the first pancake. Pour 1/4 cup batter, tip pan to evenly coat until light brown. Turn. You can add oil and butter as needed for cooking remaining pancakes.

There are so many different fillings! Here are some: sour cream, cottage cheese, jam, powdered sugar, cooked meats, sauteed onions, scrambled eggs, cheese. Spread filling on each blini, fold in two sides and roll up. Can be eaten immediately or browned in hot frying pan with butter or oil.
