Belinda's Fruit Cream by

Ingredients

1 cup sugar
2/3 cup orange juice
2 eggs
1/2 tsp. lemon juice
1 tsp. vanilla
1 cup whipping cream

Instructions

Combine the above ingredients (except whipping cream) in a saucepan and cook over low to medium heat. Stir constantly with a wire whisk for 15-20 minutes. Mixture will become foamy and slightly thickened. Let cool, stirring occasionally to prevent film from forming on the top.
When cooled fold into whipping cream, which has been whipped to the firm peak stage. Serve over fresh fruits and berries. Strawberries and blueberries are especially nice.
