Zucchini Relish by

Ingredients
11 cups zucchini
4 cups chopped onion
5 Tab. salt
Mix and let stand overnight.Drain and rinse in cold water.Drain again and add :
2 1/2 cups cider vinegar
4 cups sugar
2 teas. celery seed
1/2 teas. black pepper
1 1/2 tab.tumeric
2 chopped green peppers
small jar pimentos
11 cup
s zucchini
4 cup
s chopped onion

Instructions
Cook 30 minutes.Put into jars and seal.
If too thin add a little corn starch.
