Chimichurri Marinade by

Ingredients

3/4 cup packed fresh cilantro
3/4 cup packed fresh parsley
1/4 cup virgin olive oil
4 cloves garlic
1/2 onion
1 jalapeno or anaheim pepper(seeds removed)
3 tbsp red wine vinegar
1 tbsp lime juice
pinch of kosher salt
pinch of black pepper
1 lb steak (flank preferred)

Instructions

Chop cilantro, parsley, jalapeno, and onion
Mince garlic
Mix above vegetables with oil, vinegar, lime juice, salt, and pepper
Chop steak into bite sized cubes
Soak steak in marinade no more than 30 minutes before cooking
Cook steak in pan
Serve with rice and veggies
