Ingredients

Apples, enough to fill 6 quart kettle
1/4 C water
4 C sugar
2 tsp lemon juice
2 tsp cinnamon
1/2 tsp cloves

Instructions

Skin and core (leave skins on) apples. Add water to kettle of apples and simmer for 45 minutes or until all apples are soft, stirring often. Once all are soft, run through blender until smooth. Place back in large kettle. Add sugar, lemon juice, cinnamon, and cloves. mix thoroughly and simmer for an hour uncovered, stirring often. When it is close to the consistency of butter, pour into hot sterilized jars, placing sterilized lids and rings on, then process for 10 minutes in hot water bath. Remove and place upside down to cool.

Alternative to canning is to freeze. When mixture is the consistency of butter, remove from heat. Pour into freezer containers and freeze.
