Instructions
Preheat oven to 300.
The original recipe called for too much salt so I reduced it. It also did not include chips, nuts or what have you, which can make an added pop of flavor.
I have made these with chocolate, white,butterscotch, peanut butter chips as well as either almonds or pecans. You can be creative and melt the chips and while warm, dip the tops, sides, bottom of the biscotti and have fun.
Mix the oil and sugar til blended. Add extract and eggs, mix well. Combine the flour, salt, baking powder. The dough will be a little sticky. you can use a hand held mixer and will need to get your hands a little messy to work with dough.
Take a cookie sheet lined with foil sprayed with Pam. I take half the dough out and lay on the pan long wise and kind of shape into a rectangle. I do the same with the other half and you will have two logs on the sheet.
Bake about 335 minutes and take out of the oven to cool and reduce the temp to 275.
Cool 15 minutes and cut into 1 inch or a little bigger pieces so one log is going to give you about 12 sticks which will be about 1 inch by 4-5 inches long.
place on their side after all are cut. Place back in the oven for 10 minutes, flipping once after 5 minutes. Let cool completely and enjoy.
