Orzo pasta with sun-dried tomatoes and feta cheese by

Ingredients

1 1/2 cups chicken broth or beef pending what kind of meat you are having with the side
.
1/2 cups orzo pasta

oil packed sun-dried tomatoes (depending on size, try and go for about 3 tablespoons diced)

3 tablespoons or so of feta cheese

1/2 tablespoon Italian seasoning

pinch of salt/pepper to taste

Instructions

*OPTION* Broth can be expensive and is usually about 2 cups per can. If you want, use water and either chicken/beef bouillon cubes or the powder. If so I would use about a tablespoon to flavor the water.

Bring broth mixture to a boil and stir in orzo. Leave uncovered and stir occasionally until the liquid is more or less absorbed, takes about 10 minutes with heat at medium. Turn stove off, add the tomatoes, feta and stir.Leave covered about 5 minutes before serving.

Servings: 2

Serving Size: 3/4 cup or so
