Spatchcock Piri Piri Chicken by

This is great served with chips or my Aloo tilki sabji (Potatoes with sesame seeds).
Ingredients
1 whole chicken
1 tbsp oil (olive or sunflower)
1 tsp coriander leaf
1 tsp crushed chillies
1 tsp garlic granules
1 tsp paprika
1 tsp lemon pepper
salt and pepper

Instructions
Wash and Spatchcock the chicken (a guide can be found here (http://www.youtube.com/watch?v=GGKLtbiUflk)
Add all the remaining ingredients to a bowl, season and add the oil. Mix into a paste.
Rub the chicken with the paste and leave to marinade for 1-2 hours.
Place the chicken in a roasting tray and cook for 45 minutes in the centre of a pre-heated oven on gas mark 5, basting regularly.
Turn the temperature up to gas mark 6 and cook for another 15 minutes or until chicken is cooked and juices run clear.
Allow to rest for 5 minutes before serving
