MEATLOAF---HIT THE SPOT!! by

This moist meatloaf with its sweet topping is always a hit! Bring on the mashed potatoes! Yummm!

Ingredients

1/2 cup ketchup
1/3 cup milk
1/2 tsp. each salt & pepper
1/4 tsp. cayenne
2 eggs, beaten
1/2 cup bread crumbs
1/2 cup old fashioned oats
1/3 cup finely chopped onion
2 tsp. Spicy brown mustard
1 1/2 lbs. Ground turkey, ground beef or meatloaf mixture (I use TURKEY)
TOPPING:
1/3 cup ketchup
1 tsp. spicy brown mustard
1T. Brown sugar

Instructions

Preheat oven to 400 F.
In a large bowl, combine first nine ingredients. Mix until thoroughly blended.
Add ground meat. Mix GENTLY but thoroughly. Line a 9 x 5 inch loaf pan with foil.
Press in meat mixture and shape into a loaf. Prepare topping and spread over the meatloaf.
Bake for 50 minutes or until done. (165 F.)
Drain off fat and let rest 5 minutes before serving.
