3 c. sugar
1 c. shortening
6 eggs, separated
2 t. lemon or orange flavoring
3 c. flour
1/2 t. salt
1/4 t. soda
1 c. buttermilk

Blend sugar and shortening. Add egg yolks, one at a time, and blend after each addition. Add flavoring. Sift dry ingredients together and add to cake mixture alternately with buttermilk, beginning and ending with dry ingredients. Beat egg whites until stiff and carefully fold into batter. Pour into 10" tube or bundt pan, greased and floured.

Bake at 350 degrees for about 1 hour and 10 minutes.

Note: especially good with butter instead of shortening.
